It would be better if you put foam boxes and ice packs while shipping the products. Cheese (cheddar and gruyere) melted in the box. What I wrote is not a complaint, but a suggestion.

5-6 years ago, I asked a friend from Göleli for old cheddar, and Alibey brought me 2 wheels of fresh cheddar. I was sad when I first saw it, but when I ate it, it was the most dense milk, creamy cheddar. I ordered it from the old cheddar and gruyere site again. The old cheddar is quite hard and well-ripened. It was written as 1 year on the invoice. The Gruyere may have softened a little due to vacuuming or it was a little fresh, but the flavor is excellent. I also tried it by cold smoked in oak smoke and doubled the flavor. If you take it out of the refrigerator as much as you can and bring it to room temperature 1 hour before eating, its flavor will be better understood. Those who say that the gruyere is bad are obviously those who have not eaten gruyere before. If they eat more intense flavored cheeses such as Divle pothole or roquefort, they will go to the ED because they are poisoned.
